Recipe Swap - Money Saving Recipes

Randi is hosting a Recipe Box Swap--- For Money-Saving Recipes! I'm not familiar with how to produce a link other than copy and paste. Must learn. But this Swap is taking place here... http://ihavetosay.typepad.com/randi/recipe_box_swap/index.html

Last month there were a LOT of GREAT contributions, and I'm sure we will be pleasently surprised this week as well.

Mine are as follows:

Quick Pasta Dish
Ingredients:
1 lb. box of your choice of pasta
1 can of evaporated milk
1 bag of a mixture of frozen veggies.
1 can of grated parmasean cheese
1/2 stick of butter
Generous supply of dried parsley and garlic powder to taste

Directions:
-Cook the pasta as directed we use bows, rigitoni, penna .....
-Thaw the veggies in the microwave or over the stove, a nice Mediterranian mix does well
-After draining noodles, immediately add the butter.
-After butter is melted, add milk, cheese veggies and seasonings.

Along with a crisp salad this is a hearty meal

Mama's Hot Potato Dish
Ingredients
-10-12 potatoes
-3/4 c Sour Cream
-3/4 c Mayonaise
-Dried Minced Onions - use entire small container. Dried minced onions are a MUST.
-Salt and Pepper to taste

Directions
-Prepare a 9 x 13 baking dish with cooking spray
-After cleaning - bake potatoes in microwave in a plastic bag, until tender
-Place potatoes in baking dish and use a fork and knife to cut and mash a bit.
-Add sour cream, mayonaise, onions and seasonings.
-Mix well
Return to the oven to warm.
Ready to serve.

For a variety, add a bag of frozen peas and pop them back into the oven to cook, and/or some freshly grated cheese of your choice on top.
You might find that you may wish to add a bit more cream and or mayo. It is a forgiving recipe and you will see what is best at your table.

I must agree with you, they are lovely, but that only accounts for the outside....they are equally as lovely on the inside.

Both recipes are forgiving and you can do much to change them and make them to your own liking.

The potato recipe I made one day a few years ago when I'd not gone to the market when it was needed, and necessity is really the mother of invention, isn't it? LOL

We like fettucini alfredo, and this pasta recipe is just something that we've pulled together over the years and tossed over with a lot of different ingredients.

They are both really favorites in or home.
